The Plaisentif, commonly known as "Cheese of the Violets", is an alpine toma famous for its unique aromatic qualities. It is produced exclusively in the month of June, when the pastures of Val Chisone are enriched by the blooming of violets, which give the milk an unmistakable fragrance.
The Plaisentif 1kg represents a true expression of the dairy culture of Val Chisone, a symbol of the skill and passion of local producers. Each wheel encapsulates the perfect fusion of the unspoiled nature of the Alps and the ancient knowledge of cheese-makers, making it a precious and sought-after product.
Its production is rooted in an ancient tradition and involves only a few selected alpine pastures located in the high Val Chisone, with some encroachments into the Valle di Susa. The cheese is linked to a historical path, known as the Sentiero del Plaisentif, which crosses seven mountain pastures.
The milk used for Plaisentif must be raw and whole, coming from cows fed exclusively with alpine forage. Production takes place within a limited period of 30 days, during the blooming of violets, to ensure that the cheese retains its unique characteristics related to seasonality. This close connection with the territory and natural conditions gives Plaisentif an authentic and distinctive flavor.

The exterior of the Plaisentif is characterized by a crust of gray-ochre color, while the internal paste has a golden yellow hue. The small holes are well distributed evenly, and each shape is marked with the typical letter "P" and a stylized violet, making it immediately recognizable and authentic.
