Sweet Guanciale 230g - Mendelspeck: How is it produced

Made with carefully selected raw materials, it is produced using traditional methods, which include a mixture of dry salt curing and a maturation process that respects nature and tradition.

Mendelspeck exclusively uses meat from Italian pigs, thus guaranteeing a product of excellence. After a light smoking, the guanciale is transferred to the Passo di San Lugano, at about 1000 meters altitude, where the maturation phase takes place. The processing starts in the factory in Termeno, where the raw material is selected based on weight and quality, and all products are hand-massaged.
