This Monte Veronese dop is called that not so much because it comes from the Scaliger mountains, but because it comes from two "monte", meaning milking sessions, those of the evening and those of the following morning.
It is made from raw cow's milk and has a aging period that varies from 25 to 60 days. The rind is elastic and the paste is a slightly straw-yellow color with small holes scattered throughout. The flavor is delicate and pleasant.
It has the aroma of fresh milk and during the summer period, it is particularly floral.
