It is the medium-aged version of this cheese from the Veronese mountains, produced exclusively with raw cow's milk and has a semi-cooked texture.
It is aged for 6 to 8 months. The rind is thin and elastic. The paste has a color that varies from white to straw yellow, especially in the summer period.
More intense in fragrance with a nice sensation of yellow flowers, fresh milk, and a beautiful balance on the palate.
