It is a simply exciting and rare cheese. Aged for up to 18 months, it is produced only with summer milk from high mountain pastures in the Lessini.

Very hard to cut into flakes, it is rich in scents of honey, dried fruit, melted butter, aromatic herbs, and ginger.

Great intensity on the palate with a nice creaminess and pleasant finish of toasted almonds and sweet spices. 
 
La Casara won the 32nd edition of the Festa del Formaggio Monte Veronese, in the category Monte di Malga.

La Casara Roncolato, Veneto

Among the hills of Roncà, under the ancient volcano of Calvarina, the story of the Roncolato family and their cheese factory begins. In the 1920s in Brenton, Ermenegildo with his sons Angelo and Romano started the cheese-making business. Verdant pastures climb up to the highest peaks of the Monti Lessini, the Piccole Dolomiti of Verona. Since 1964, the cheese factory has been run by Romano and he called it La Casara. This long tradition continues today with his children Giovanni, Gildo, and Letizia and has become one of the most important and refined quality realities in the Venetian and Italian production landscape. Giovanni has been the true promoter of the revival of the DOP Monte Veronese cheese and has especially tried from the beginning to bring young people back to the Veronese mountains to reclaim the tradition of the malghe. Today, La Casara has won numerous awards in international competitions and offers a wide range of its own production cheeses: cow's, goat's, and sheep's milk. Over time, Giovanni has become a refined selector of cheeses from all over the world, and here we present some for you. La Casara also has its own production of cured meats thanks to the free-range farms in the lands of Brenton, from which the famous and rare soppressa originates. Authentic flavors, typicality, and genuineness are the fundamental characteristics of this beautiful Italian reality.
