The Asiago takes its name from the Vicentine plateau, which boasts many high-quality pastures with fine floral components and hay.
It is made from cow's milk and has a semi-cooked texture. It is a typical and ancient cheese whose history dates back to around the year 1000, produced by Celtic peoples. It ages for 20-40 days.
It is therefore particularly fresh and sweet with a beautiful creaminess on the palate.
