It is a typical and ancient cheese whose history dates back to around the year one thousand, produced by the Celtic peoples. The aging of this cheese is 12 months, and its paste is particularly compact and hard. It has a scent of wildflower honey and melted butter. On the palate, it is flavorful, savory, sweet, with a very pleasant finish reminiscent of almond milk.
