The Asiago takes its name from the Vicentine plateau that boasts numerous high-quality pastures with fine floral components and hay. It is made from cow's milk and is semi-cooked cheese. It is a typical and ancient cheese whose history dates back to around the year 1000, produced by the Celtic peoples. The aging of this cheese is 12 months, and its texture is particularly compact and hard. It has a scent of wildflower honey and melted butter. On the palate, it is flavorful, savory, sweet with a very pleasant almond milk finish.
