How delicious this Bagoss cheese is! And how beautiful it is to see with its bright yellow paste! A miracle of nature? No, it is an ancient tradition that involves the use of saffron in the cheese dough.
Produced in the village of Bagolino, in the Brescia mountains, it is made only with mountain milk. Semi-cooked, it is normally aged for at least 24 months. It has a typical aroma and a very compact paste. Where does the name come from? It comes from the name given to the inhabitants of Bagolino, Bagossi.

It is an incredible table cheese to enjoy with some coarse polenta freshly taken out of the pot.
For this great cheese, you can also pair it with classic sparkling wines, such as a nice Franciacorta, or medium-structured red wines, and if the aging is high, also Amarone or Barolo.
For shipping, we vacuum pack it and place it in thermal packaging so that the cheese arrives in the best conditions to be enjoyed!
Tasting notes
Sapore intenso talvolta leggermente piccante. Ha aroma persistente, di frutta secca, floreale e pasta compatta che, con la maturazione, si sfalda in scaglie.
