The Blu 61 cheese is an exceptional blue cheese made from cow's milk, multi-awarded and produced through aging in Raboso passito wine and red blueberries.
The texture of the cheese is creamy, with a widespread presence of blue marbling due to the molding.
It is certainly a work of art for its elegance and harmony: an intense, decisive flavor, balanced by the typically sweet, wine-like aroma of Raboso passito.
So many awards won!
It would be almost impossible to list them all, but let us tell you about one of the first awards won by Blu 61: the Gold Medal in the "blue cheese" category at the Alma di Caseus 2012 competition, organized by the International School of Italian Cuisine led by Gualtiero Marchesi. Then, in 2013, it was awarded by Slow Food and Onaf at the international event "Cheese" in Bra with a diploma of excellence at the "Infiniti Blu" competition held in Gorgonzola.
From then on, Blu 61 has always stood out, accumulating recognitions that also indicate how the quality of the product has remained unchanged.
