Made with raw cow's milk, placed in the pomace of Recioto and aged for 11 months. It takes on a particular aromaticity and a pleasant spiciness. The Ubriaco di Recioto is a cheese for true connoisseurs, in search of something unique. The spiciness merges with the sweetness of the sugary notes of Recioto di Gambellara and the delicate milky notes.
The cheese Ubriaco di Recioto di Gambellara from La Casearia Carpenedo (which we present here in a quarter wheel portion, about 1.5kg) is a combination of great flavors and aromas: tasting it, the vinous, sweet notes with a faint aroma of milk stand out; raw milk is also prominent with all its generosity of natural aromas from the pastures near the Alps. A cheese that gives great emotions, which is why we can consider it a perfect meditation cheese to enjoy at the end of the meal. Excellent with honey and mustards and sweet dessert wines from white grapes.
Cheese with flat faces. The rind is deep straw-yellow speckled with dark brown tones, a color transmitted from the grape pomace and reflecting in the imperfections of the rind. The paste is rich yellow and finely eye-dotted. Originally a hard cheese that takes on a slight softness during the vinification processing stages. A compact texture that, depending on the aging, allows for grating.
