The small village of Montorio has been watched over for centuries by the beautiful Scaliger castle that stands proud and austere. In this small valley, water has been a resource since ancient times, and the natural springs still represent a guarantee of environmental purity today. Beyond Montorio lies the foothills of the Piccole Dolomiti, the Lessini mountains of Verona, which provide this area with a continuous refreshment in summer and constant ventilation. Producing naturally for the Bianconi family is a tradition that has lasted for 50 years. 11 hectares of fruit orchards owned by the family where the new generation formed by the children Alessandro, Gabriele, and Saverio still practice a three-year crop rotation to avoid phytosanitary treatments and enhance sustainable cultivation. From the fresh, ripe fruit of Montorio's fields to the jar of jam. A process that was born a few years ago and is already consolidating a quality closed supply chain project that offers consumers certainty of origin. The La Gambarella jams do not contain thickeners or preservatives. Only fresh fruit, cane sugar, and lemon juice are used. The amount of fruit used to produce 100 g of jam is 120 g. A complete absence of any cross-contamination is guaranteed. All jams are certified gluten-free. The jams are made from fresh fruit processed under vacuum at low temperatures, max 60°C. This allows for the extraction of the water from the fruit, increasing the density of the product and its creaminess. The Bianconi family offers us delicious jams with very original combinations of fruit, spices, and aromatic herbs. An ideal blend to stimulate creativity at the table with tasty pairings with cheeses or cold cuts.
