This salami is part of the ancient Padana tradition where the highest concentrations of pig farming have always been found. Parma, along with Mantova, Modena, and Reggio Emilia, represents the main production area of this cured meat and is still defined as the Italian and European food valley today. The coppa is made from the neck parts of the pig. The only substance used is salt, which is necessary for aging and preservation.

Pedrazzoli has been the first salami producer in Italy to produce organic products. Since 1996, it has added this segment, which becomes increasingly important every year. Grains and food products来自 organic farming, free-range farming, drastic reduction of preservatives, GMO-free, and limited intake of salts and fats. All production is particularly suited for the diet of celiac individuals and the dietary regime of intolerant people. Many of these cured meats are listed in the national pharmaceutical handbook for celiacs. The Bio Primavera line was awarded in 2013 in Paris with the prestigious Good Pig Honorary Mention during the Animal Welfare Awards. The ceremony featured the entire European market, with Italy represented by the Pedrazzoli family. The Good Pig Honorary Mention was awarded for "the commitment to protecting the welfare of sows, demonstrating how it is possible to make choices in favor of animal welfare as well."
