The Pre-cooked Whole Salamina delle Nebbie from Salumificio Pedrazzoli is a salami with a strong flavor and represents one of the excellences of Italian cured meats. It is a mixture of minced pork meat with red wine, salt, black pepper, nutmeg, and other spices, the true secrets of artisan masters.

The fog is a constant companion of the Mantuan plains. It envelops the countryside and small villages of red brick. Its presence is an added value for the maturation of salami in the Pedrazzoli cellars in San Giovanni Dal Dosso. The molds grow luxuriantly and gradually dry the moisture of these small ancient cured meats from the Mantuan tradition. The fat component is greater than that of the classic Mantuan salami, which requires a greater influx of molds.
