The Sopressa Veneta from Salumificio Pedrazzoli is a cured product made from pure Italian pork, minced and stuffed into a natural casing and tied by hand.
The ruby red color is given by the lean cuts alternated with the white of diced lard fat.
When cut, it is firm with a good slice retention; the uniformity of the finely grained lean parts is interrupted by the presence of lard cubes.
The flavor of the Sopressa Veneta is full-bodied and pleasant with an intense perception of aging.
