Made according to the traditional Modenese recipe, it is steamed in the oven naturally without casing, preserving its typical aroma enhanced by notes of rosemary and bay leaf. This detail perfectly represents the concept of transparency of Salumificio Pedrazzoli. With this cooking method, the customer only pays for the product they buy (not for the cooking water!). In addition, the Pampano is cooked and then packaged, ensuring a cleaner product with less fat, thus a higher quality product!
 
Another distinctive characteristic is the non-sterilization of the shank without the addition of preservatives. A product that reaches the consumer just as if they cooked it directly at home. This practice tied to tradition and the great experience of Pedrazzoli makes the taste of Pampano richer.
