Valserena is a cult brand in the production of Parmigiano Reggiano DOP. In fact, the production is defined as "solobruna," meaning that all the cheese produced comes from the Brown Swiss breed. A cow that produces high-quality milk for the production of Parmigiano Reggiano.

Caseificio Valserena: Parmigiano made from 100% Brown Swiss for a rich and delicate flavor

An excellent balance of saltiness and sweetness, with a particularly pronounced floral aroma. The production area is in the low Parma region in Gainago, a district of Torrile. The name of the dairy recalls that of the ancient abbey of Valserena, where monks were already producing a hard cheese very similar to the current Parmigiano Reggiano in the Middle Ages. Different qualities of hay and great attention to the well-being of the cows, which in this way produce better and high-quality milk.
