Trota Oro was founded by Vittorio and Lucia Leonardi in 1988 with a production of smoked trout according to an ancient traditional recipe. Their products are unique thanks to the high-quality raw materials, namely alpine salmon, marinated trout, fresh trout fillet, marinated alpine char, and finally trout roe and bottarga. Some of Trota Oro's secrets include the slow growth of fish in cold, pure waters, the use of natural feed, smoking done with sweet beech wood, hand and dry salting with sweet salt from Cervia, and the processing takes place according to recipes refined by time and experience.
