Trota Oro

Trota Oro was founded by Vittorio and Lucia Leonardi in 1988 with a production of smoked trout according to a &' an ancient traditional recipe. Their products are unique thanks to the high quality raw materials, namely alpine salmon, marinated trout, fresh trout fillet, marinated alpine char and finally eggs and trout botargo.
Some of the secrets of Golden Trout are the slow growth of fish in cold and pure water, the use of natural feed, l&' smoking made with sweet beech wood, manual and dry salting with Cervia sweet salt, and the processing takes place according to recipes refined by time and experience
