The Sabina Producers Organization was created to offer consumers and the catering sector certified, organic, and traditionally produced Italian products: that of the Iovanna family, founder of the project and inspirer of the practices adopted by the cooperative to enhance the local garlic.
Also known as “Ufita garlic” after the river that flows through these lands, this product meets two important agri-food standards, abbreviated as IFS and GLOBAL GAP: let’s briefly see what this means.
International Food Standard
It is a standard used by countries in Central Europe to demonstrate compliance with good hygiene practices in the processing of raw materials (HACCP), with strict control over the quality of each production phase. The parameters considered also include packaging choices and efficiency in waste disposal, which must be carried out in an environmentally compatible manner.
Good Agricultural Practice
The Global Gap standard considers the traceability of products, the environmental aspects of their cultivation (e.g., sustainable soil use), the agricultural techniques adopted (such as the quantity or absence of pesticides used, the irrigation system, post-harvest treatment, etc.), the working conditions of collaborators, and other elements related to the overall management of the business.
Sabina complies with both standards, providing its customers with a unique garlic.
The garlic of Sabina and its characteristics
We are in Mirabella Eclano, a municipality in the province of Avellino, in Campania. Here, for many generations, the Irpinian hills have nurtured the local variety of Allium sativum, cultivated with care and destined to be marketed in nets or in the more traditional braids, or finally to be processed into peeled whole cloves, dehydrated garlic flakes, garlic granules, or even garlic powder, for all uses.
Fresh, this ecotype presents itself as a medium-sized bulb, with a white color tinged with pink: fragrant and rich in healthy nutrients, it is a fundamental ingredient for countless recipes of Italian cuisine, which has always enhanced its flavors with the fragrant aroma of this white spice.
