We also recommend a simple traditional Sicilian recipe, which is to eat them in a salad with some wild fennel, a few drops of extra virgin olive oil, and a pinch of sea salt (in Sicily, onion and olives are often used as well). They are superb.
The unprocessed skin can be used to flavor cooking bases for white meats, to be grated into batter for sweet dough; ideal, as mentioned earlier, for being candied and sugared on the surface.
