The Baldus Cheese by La Casara is a semi-cooked cheese made exclusively from pasteurized cow's milk.
Baldus is dry salted or brined, and has a minimum aging of two months. It has a cylindrical shape with a slightly convex edge and almost flat faces. The rind is thin, and the paste is a straw-yellow color. It has an elastic and soft texture with pronounced holes, offering a milky taste and a sweet and intense flavor.
