Fava beans are a ritual product of Lent like few others. Particularly in the southern regions of Italy, especially Lazio and Campania. Fava beans are important products that come from crops among the vineyards because the plants are excellent producers of radical nitrogen, which is deposited into the soil and enriches it, naturally fertilizing it. The fava beans from Vesuvius are an incredible mineral reserve with large quantities of potassium and iron. They thrive on volcanic soils, thus having a strong and unique flavor, with hints of flint that make them more intensely aromatic.
