The summer black truffle Tuber aestivum, also known as “scorzone”, grows abundantly in Umbria from late spring until late summer and early autumn.
It is harvested and cleaned for us by Tartufi Bianconi, who will ship it directly to your home.
On this page, we present it to you in quantities of 100 grams.
On the outside, the summer black truffle is rough, black in color with brown hues, while on the inside it is colored between brown and hazelnut with thin lighter veins.
Being a naturally occurring product, it can vary greatly in shape and size, and it may present external scratches or other imperfections that, on the other hand, certify its naturalness.
Another aspect to consider regarding quality is that the truffle reaches its complete maturity approximately from the second half of June. At the beginning of the month, it may be less fragrant and aromatic.
The summer black truffle, unlike the white one, has a longer shelf life and can easily last 7-10 days from harvesting to consumption.

The summer black truffle is used to prepare tasty sauces to dress pasta or risottos, but it is also used to flavor cheeses and cured meats. Excellent to put on soft fried eggs or poached eggs. Inside frittatas with wild vegetables. Ideal for seasoning grilled beef steak. For fresh tagliolini and short pasta. To pair with structured white wines and fresh red wines such as Valpolicella Classico or Sangiovese from Maremma.
Availability and prices can vary greatly throughout the season, even weekly.
The individual pieces of truffles can vary from 15 to 50 grams or more depending on availability.
Orders are shipped directly from the producer from Monday to Thursday.
Fresh truffles will be shipped in a patented polystyrene container specifically designed to maintain freshness and will be accompanied by a quality certification from mycologist Saverio Bianconi.
