This cured meat is a unique excellence of Italy, produced by the skill and creativity of the Giannelli family. It encapsulates the butchering experience of a people and their traditions with an added value of interpretation. The cut is a classic noble. Subsequently, the meat fillet is sprinkled with aromas and spices marinated in Apulian white wine and finally dusted with sweet paprika that reddens the surface of the meat. Finally, the cured meat is left to age for 180 days. Completely free of preservatives, lactose-free, and gluten-free.
This is a cured meat that also shows a beautiful softness and elegance to the touch, almost like velvet. Soft and slightly spicy with a pleasantly and delicately sweet-spicy finish. It has a nice balance between the salty and spicy components. An excellent cured meat for appetizers or as an entrée for lunch or dinner. Ideal on typical Apulian bread or thick crust bread baked in the oven. Pleasant with slightly aromatic white wines such as Lugana or Custoza, or with white wine from the Amalfi Coast. It is also to be enjoyed paired with creamy cheeses or medium-aged goat cheeses.
