This cold cut is a unique excellence made in Italy produced by the mastery and creativity of the Giannelli family. It embodies the butchering experience of a people and their traditions with an added value of interpretation. The cut is a classic noble. Subsequently, the meat fillet is sprinkled with flavors and spices marinated in Puglian white wine and finally dusted with sweet paprika that gives the meat surface a reddish hue. Finally, the cold cut is placed to age for 180 days. Completely free of preservatives, lactose, and gluten.
This is a cold cut that even to the touch shows a beautiful softness and elegance, almost like velvet. Soft therefore and slightly spicy with a pleasantly and delicately sweet-spicy finish. Spicy with a nice balance between the salty and the spicy components. Excellent cold cut for appetizers or as an entrée for lunch or dinner. Ideal on a typical Apulian bread or thick-crusted bread baked in the oven. Pleasant with lightly aromatic white wines such as Lugana or Custoza or with white wine from the Amalfi Coast. Also to be enjoyed paired with creamy cheeses or moderately aged goat cheeses.
