Piedmont is one of the regions with the oldest tradition of apple production in Italy, even before South Tyrol. There are still cultivated cultivars that have disappeared in other regions. The area of the Varaita Valley is ideal for their production. Floodplains extend into a valley that narrows more and more as it climbs toward the mountain and the Monviso group. A particularly breezy climate prevents the proliferation of pests and therefore drastically reduces phytosanitary treatments. The young people of Monvisotta implement hormonal sexual confusion and thus, through traps, they can effectively carry out their apple orchard cultivation activities. The environment is clean, both in the valley and at altitude. These are the first early apples! The quality that arrives first in this valley, ahead of the more well-known ones like Royal Gala.
The Royal Gala are apples that have yellow and red streaks, depending on where the sun has hit the skin. They are particularly sweet and juicy. They remain crisp for quite a long time if kept cool and stored properly between 1 and 8 °C, even up to 180 days. They have a nice acidity but stand out for their intense flavor and sweetness. These are grown at altitude, which means the acidity is higher and therefore they are more suited for fruit salads, traditional apple-based desserts where the wedges can maintain even better crispness after cooking. We also recommend them to enhance your lettuce and cherry tomato salads. Pair them with fresh goat cheeses!
