Crudo Alpino half form

The Crudo Alpino comes from a piece of loin that is aged and smoked in stone caves in the mountains with aromatic herbs typical of high altitudes such as arnica, juniper berries, mother herb, and other rarities found particularly in the Lessini Mountains, which are rich in flowers.

The loin is tied while still fresh and sprinkled with spices and herbs. It is then left to smoke naturally from the slow burning of branches and juniper berries.

The aging process will then take place for 6-8 months. At the end, after partial trimming, it is packaged.
