The Morlacco is a cheese typical of the Veneto region, particularly from the alpine pastures of Monte Grappa.
This peak, which became famous for the heroic events of the Great War, since the time of the Republic of the Serenissima, had seen the settlement of Balkan peoples, shepherds, and lumberjacks, who began to produce a simple cheese here that took its name from the region of their origin: Morlachia.
It is a cheese made from raw semi-skimmed cow's milk and a rennet coagulation. This is why its aroma is so intense and its texture particularly elastic with a consistent eye formation.
