It is a cheese with a very intense aroma that contrasts with a flavor that is instead very gentle and delicate offering beautiful sensations of melted butter, toasted dried fruit, and creaminess mainly due to the presence of sheep's milk. The rind is completely edible and slightly bloomy. Very creamy and compact without eyes. Excellent for creamy cheese boards, with green tomato mustards, figs, and with dried fruits like cashews and walnuts. Pleasant with light red wines such as Valpolicella Classico or Bardolino. Also pleasant with classic method sparkling wines like Franciacorta.
