The Pre-cooked Nebbia Salamina in 200g wedges from Salumificio Pedrazzoli follows an old tradition from the province of Ferrara.

It is produced by grinding various parts of pork such as neck cap, cheek, the lean parts of the scraps from processing the thigh, and shoulder, with the addition of small amounts of tongue and liver. To the salama da sugo mixture, salt, pepper, and nutmeg are then added. The aging process lasts between 8 and 10 months.

The precooked sliced salamina delle nebbie can be ideal for those who want ready slices in no time, without having to worry about cooking. The best accompaniment is a mashed potato or liquid pumpkin. It's also perfect to eat raw as an appetizer (the pairing of salama da sugo and figs is famous) or paired with vegetable creams or zucchini jams, eggplants, or caramelized onions. The risotto with leeks and salama da sugo is famous, as well as the tortellini, typical of the Emilia-Romagna region, enriched by its aromatic flavor. It should be consumed with the Coppia ferrarese, the typical twisted bread from Ferrara. Recommended wines: Lambrusco or Valpolicella.
 


TASTING


Dark brown sausage with a spherical shape, “a melone”, tied with string in 6/8 slices. The outer surface is irregular, with a firm and compact texture. Extremely intense and aromatic aroma. On tasting, the salama is soft and grainy, with a full flavor that lingers over time thanks to the presence of well-balanced aromas.
