If you have made it this far, you are in the treasure chest of rare cheeses, cheeses to try, cheeses that can only be found in the best "pizzicherie" (the gourmet shops of the past, where you could find unknown products and, the person behind the counter would let you taste a typical "cigarette" of cheese that they were slicing).

Let's not digress: it is a blue cheese that is obtained using goat toma with the classic acid curd, inoculated with Penicillium roqueforti.
After salting, the toma is aged - for about a month - wrapped in forest red fruits, currants, raspberries, blackberries, and blueberries.

Goat blue with berries 200g: How is it produced

È un formaggio a latte crudo erborinato che si ottiene utilizzando la toma del caprino con la classica cagliata acida, inoculata con Penicillium Roqueforti.
Dopo la salatura la toma, viene messo in maturazione - per circa 45 giorni - avvolta da frutti rossi di bosco, ribes, lamponi, more, mirtilli e petali di rosa.
La crosta è edibile.

Made from pasture-raised goats from the Alps, it undergoes mold treatment with Penicillium roqueforti and is left to mature in contact with ripe red fruits.

Ottenuto da capre di alpeggio delle Alpi, dopo erborinatura con Penicillium Roqueforti, viene lasciato maturare a contatto con frutti rossi maturi e petali di rosa.
