The Blu di capra del Baldo is a blue cheese made from whole goat's milk sourced from the Baldo area, the mountain overlooking Lake Garda. A product that satisfies lovers of blue cheeses and appeals to those who do not appreciate intense goat notes.
The light hazelnut and rosy crust is slightly rough and features holes to promote the blueing process. The paste is compact, ivory-colored, with homogeneous blueing. Tending to be sweet and delicate with milky sensations. Goat notes are mildly accentuated, also thanks to the blueing process which remains delicate.
The Blu di capra del Baldo (which we present on this page in a 200g portion) is excellent when paired with thinly sliced raw fennel.
Delicious also with a fresh pear puree or even with a light honey. It is very good when tasted alone, but our advice is to not serve it cold in order to fully appreciate its sensory characteristics.
