Preparation: Tomatoes harvested at mid-ripeness and processed within 24 hours, cut and left to macerate with sugar and homemade white wine for at least 12 hours. Slow cooking until the desired density is reached.

Shelf Life: 2 years if kept in perfect storage conditions, that is in a dry place, at a temperature not exceeding 20°C, in an airtight package, vacuum-sealed and protected from light.
