The Pecorino Riserva Latte Crudo is a fresh cheese, with a short aging period, salty and semi-hard with a pearl color, and is produced as families of shepherds and cheese makers did more than a hundred years ago: bringing the sheep to pasture, using natural rennet, and, above all, not pasteurizing the milk.
This cheese has remained faithful to ancient and traditional recipes, always respecting modern production regulations. The milk obtained from the flocks is processed fresh at a temperature not exceeding 40 degrees, preserving the aromas and flavors of the pasture. The cheeses are left to age for a minimum of 60 days on wooden boards, after which they are washed and brushed.
