The Pecorino Riserva Latte Crudo is a fresh cheese, with a short aging process, made from salted semihard paste in pearl color, and it is produced as families of shepherds and cheesemakers did more than a hundred years ago: taking the sheep to the mountains, using natural rennet, and, above all, not pasteurizing the milk.
This cheese has remained faithful to ancient and traditional recipes, always respecting modern production regulations. The milk obtained from the flocks is worked fresh at a temperature not exceeding 40 degrees, thus preserving the scents and flavors of the pasture. The forms are left to mature for a minimum of 60 days on wooden boards, after which they are washed and brushed.

The Pecorino Riserva Latte Crudo (which we present on this page in a 200g portion) is very good when paired with crispy warm bread, or with polenta, boiled potatoes, pears, or chestnut flour fritters. Excellent when matched with full-bodied red wines, such as a Chianti or an Amarone.
