The Toma di Gressoney is a gem of the Aosta Valley dairy scene. Semi-fat cheese with a soft texture: this toma is processed directly in the pastures of the Lys Valley using traditional methods.
This cheese is made from goat's milk and is aged for at least 45 days. Thanks to the clear air and the purity of the environment in which the goats graze, Toma di Gressoney is rich in interesting organoleptic properties: it contains less than 23% fat. It offers a rather high intensity of aroma and floral sensations. Its texture is elastic, pale straw-colored, with a sparse but evenly distributed eye formation.

An important table cheese to be enjoyed throughout the meal, it's great if paired with home-made bread.
It holds its own on cheese boards alongside other alpine and aged cheeses. Even better when served at the end of a meal or paired with the many typical cured meats from Aosta. As a pairing, it certainly prefers full-bodied red wines.
