The Blu del Moncenisio d'alpeggio is a blue cheese made from raw cow's milk from alpine pastures, aged from 28 to 60 days in caves and produced on the Moncenisio plateau, the Alpine pass of the Cozie Alps that separates Italy from France.

With a compact and melting texture, sparse eyes, and an ivory white color, it is very tasty and pleasant. The Blu del Moncenisio is cylindrical in shape, with a thin, dry rind covered with a light white-gray mold.
