Great cheese of the Southern Italian tradition, particularly from Basilicata and Calabria. Made using the spinning technique similar to mozzarella, these shapes, weighing between 1 and 2.5 kg, are hung with string on support poles in the cellars for aging that lasts at least three months.
During this time, the product increases its aromaticity and with aging, it can even present an amber coloration with extraordinary olfactory sensations of dried fruit, chestnut and wildflower honeys, and aromatic herbs from the Mediterranean scrub.
