They call it the “hard one with a tender heart”: when temperatures drop below zero, it becomes tender and sweet like few vegetables can do. With the frost, the heart that it hides inside becomes just a little bigger than a button.
The beneficial properties of the broccoletto di Custoza are also recognized by doctors: richer than others in the same family in vitamins and minerals, thanks not only to the careful selection of seeds, derived from the inflorescences of the previous year, but also to the land rich in clay.
The Custoza broccoli, in quantities of 1kg, are perfect in the classic combination: boiled eggs, salami, a piece of cheese, and boiled broccoli. All paired with a Custoza wine, of course. To appreciate it in its purity, just cook it boiled or steamed and drizzle it with a touch of oil and salt.
The flavor of the Custoza broccoli is sweet: the more it gels, the more it is exquisitely sweet.
