The extra aged cheese in hay by Corrado Benedetti is a true delicacy reserved for those who love bold and engaging flavors. It is a mixed sheep cheese that after two months of aging enters a barrique wrapped in the hay from the Lessinia mountains.
It enters the barrique still fresh, but dry, and remains there for 90-100 days, under this soft warm blanket, sealed and kept at controlled temperature and humidity. Once extracted, it continues aging for another 6 months before reaching the perfection of an intense cheese with fragrant herbal notes.

It is a perfect cheese for high-quality platters, to be paired with noble Italian cured meats; excellent with mustards, such as the very delicate apple mustard.
It pairs very well with acacia honey and full-bodied, aromatic white wines like Gewurtztraminer.
