The Lapsang Souchong Crocodile Black Tea is a traditional Chinese tea, with a strong and smoky flavor, intense red color. The particular smoking process makes this tea excellent for pairing especially with very flavorful or spicy foods.
To make this tea, the already large and developed leaves are processed, and then they are smoked over resinous conifer wood fires. It is a highly appreciated specialty in Anglo-Saxon countries. It has a modest caffeine content, particularly digestive.
The smoked black tea Lapsang Souchong Crocodile is often used in cooking, pairing very well with fish, or it can be used to create some smoked-flavored dishes like Lapsang carbonara or Lapsang risotto.
It is often used as a "spice" instead of bacon in vegetarian recipes.
Preparation: steep a teaspoon of Lapsang Souchong Crocodile black tea in hot water at 95 degrees for 3-5 minutes.
