This Aromatic refined in walnut leaves by Corrado Benedetti is based on a Cimbro and is a genuine and healthy cheese, very fragrant and particularly aromatic.

After a maturation that must not exceed 60 days, the refining, which lasts about two months, takes place in barriques, where the forms are arranged in layers, alternating them with walnut leaves. The method has ancient origins: the rich tannin content of the walnut leaves helps preserve the cheese while simultaneously imparting its unmistakable aroma.


THE HISTORY OF CIMBRO


The origins of the Cimbro date back to around 1300, named after the people of the Cimbri, who at that time had found a home in Lessinia. Mostly shepherds and farmers, woodcutters, and simple sheep breeders: among the meadows and rocks of the mountain range they found their promised land. With them, the production activity of this cheese was born, which has remained in the Veronese tradition.

Ingredients: Cow's milk, salt, rennet, cultures. Preservative lysozyme (egg protein). Aged in walnut leaves.
