The smoked stewed bacon has a pink color for the leaner part interspersed with white stripes of fat, its aroma is clean and intoxicating, and its spices add a soft and fragrant note.
The bacon is trimmed and salted using brine to make it even tastier and more appetizing. After salting, the bacon is handcrafted for at least 24 hours, cooked in steam-saturated ovens, and smoked with beech wood to give it a natural golden color.
The bacon can be used in pasta all’amatriciana, although the traditional version calls for the use of guanciale, by those who do not particularly enjoy strong flavors but prefer smoky ones.
