The Pancetta Salamata falls into the category of cured meats. The Salumificio Freoni Danzi prepares it according to the traditional Venetian recipe: made from ground meat, stuffed in casing, tied by hand, and then aged for 60-70 days.
It is prepared using only and exclusively pancetta, separating the fatty part from the lean part in a distinct way, cut and chopped using the knife-point technique. In the end, it is mixed with an original seasoning of salt, spices, and aromatic herbs.
