The cheese Gionè from La Casearia Carpenedo was born from an idea by Antonio Carpenedo to honor the figure of Giorgio Onesti, a person who dedicated his life to the research and selection of gourmet delicacies.
In the 1970s, he collaborated with Antonio as a representative; it was thanks to him that the first forms of Carpenedo cheeses knocked on the doors of specialty food stores all over Italy, particularly in the market of Rome. During one of the long conversations he had with Antonio, which usually took place after dinner until late at night, he suggested that Antonio register the famous brand Ubriaco.
To create the Gionè, Antonio decided to start from a base of raw cow's milk cheese aged a minimum of 5 months produced in the Venetian mountains. He chose to mature it in his caves with a top-secret treatment he created himself that covers the crust of the cheese. During the aging period, each form takes its shape and becomes enriched with special aromas that take us on a journey through field herbs, flowers, ripe fruit, spices, and underbrush.
The cheese Gionè from La Casearia Carpenedo (which we present here in a 300-gram portion) is a cheese that tastes of pasture, of mountain and carries with it the charm of distant spices; the alcoholic notes that enhance the pride and elegance of this cheese remind us why Gionè is so special. Perfect with a peaty Whisky or chestnut distillate.
To the eye: velvety appearance, the brown color of the special coating wraps around the irregularities of this unique cheese. Its curves resemble sweet hills just sown. In hand: extraordinary contrast; the dry and delicate rind contrasts with the softness of the paste. On the nose: in the Gionè paste, one can sense the pastures, while the rind takes us on a fascinating and mysterious journey with Antonio Carpenedo. A sensory play, because the ingredients remain a secret of Antonio.
