A barrel-aged with black olive paste, olive leaves, and extra virgin olive oil from Puglia in Masseria.

This time, it is Puglia that takes the spotlight with a cheese base whose recipe dates back to the medieval era.

Raw milk and goat rennet. Small cylindrical cheese mold with a rustic appearance. Aging in barrels with olive paste for at least 4 months gives the crust an uneven brown color.

The cheese has a white color and a crumbly texture.
