This is a wine made from pure Grasparossa di Castelvetro grapes and from a selected ancient strain.
The grapes undergo a fermentation with slow maceration at controlled temperature.
Subsequently, it is refined for about six months in steel. Finally, the sparkling process lasts for thirty days.

Everything began in Solignano Vecchio, in the municipality of Castelvetro in Modena, in the immediate post-war period. Franco Simonini, a great winemaker from Castelvetro, acquired a new estate where he decided, with his wife Margherita, to isolate the best Lambrusco vines in collaboration with the University of Bologna. In particular, he focused on the native variety par excellence: the Grasparossa. He managed to isolate a unique clone in the landscape of the denomination’s clones, and years later, his grandson Francesco Gibellini, along with Uncle Massimo, used it as the only clone for his great expressions of Lambrusco. This year, the Lambrusco from Pederzana has been recognized by the prestigious Guide to Wines of Italy from L’Espresso as the best Lambrusco overall and has received the Oscar for excellence.
It is a traditional lambrusco with a nice fruity component on the nose that smells of raspberries, currants, and sour cherries. On the palate, it has a dry and smooth tannin with an overall nice creaminess. Well-fruited with marasca and red currant. Raspberry and white pepper spice. Soft and spicy finish.
Pairings. Ideal for traditional Emilian first courses, tortellini in broth, ravioli, baked lasagna, tigelle, and fried gnocchi as well as pasta with Bolognese sauce.
Excellent with cotechino and other particularly fatty cured meats in addition to flavored lard paste.
