The Spongata cake is a typical sweet from Emilia Romagna, with very ancient Jewish traditions.
In Busseto (Parma), when Giuseppe Verdi had just finished publishing the libretto of Don Carlos (1867), this specialty of shortcrust pastry filled with honey, almonds, pine nuts, candied fruit, cedar, and raisins was born in the ancient Muggia pastry shop. A specialty that the composer was fond of!
Since then, the original recipe has remained unchanged, and Piccolo Mondo del Gusto bakes all the spicy fragrance of a historic and prestigious sweet that evokes, in its full and enveloping taste, the great music of Giuseppe Verdi.
Ingredients: type "0" wheat flour, wildflower honey 20.6%, sugar, apricot jam (apricot puree, glucose-fructose syrup, sugar, gelling agent: pectin, acidity regulator: citric acid), non-hydrogenated vegetable margarine (vegetable palm and sunflower oils and fats in varying quantities, water, emulsifier E471, salt, acidity regulator E330, flavorings), butter, sultana raisins 5.8%, breadcrumbs (wheat flour, brewer's yeast, salt), candied orange peels (orange, glucose syrup, sugar), almonds 3.3%, potato starch, pasteurized egg yolk and albumen, candied cedro peel (candied cedro, glucose syrup, sugar), spice mix (cinnamon, cloves, nutmeg), leavening agents (sodium acid pyrophosphate, sodium bicarbonate, potato starch), salt, flavorings.
