The Pork Mocetta from Quadro Carni e Salumi is a quality cured meat that brings with it the scents and flavors of the Piedmont region. Technically, it is a seasoned lonzino (pork loin) and is one of the oldest cured meats in the tradition of the Western Alps. With a truly delicate and inviting aroma, it is made from the trimmings of the muscle bands of the deboned pork neck.

Characteristics: deboned pork neck, spiced, salted, and aged for at least 90 days. Red color, sweet and characteristic aroma, sweet and delicate taste.


What is mocetta? A bit of history

The mocetta is a typical product of the Western Alps, between Aosta Valley and Northern Piedmont, and is listed among the traditional Italian agri-food products of the Ministry of Agricultural Policies. It is a very ancient cured meat that can even be found depicted in ancient frescoes within the castles of Aosta Valley.

It is also called motsetta or motzetta: its full name in dialect is morseau de vianda setza and means piece of dried meat. It is, in fact, dried meat, which is a method of preserving food resources that was widely used centuries ago to allow for usage in winter. Historically, the meat used for this type of cured meat was that of chamois, but today various types of meat are used: the important thing is that they are lean cuts.

Whole pork mocetta 1.2 kg: use in the kitchen

The Mocetta di maiale from Quadro Carni e Salumi (which we present here in a whole form of about 1.2kg) is an excellent cured meat for appetizers and for traditional cold cuts platters.
Traditionally, mocetta is served in thin, almost transparent slices as an appetizer, complemented with a drizzle of honey and accompanied by bread, butter, and a glass of wine. Perhaps a medium-bodied red wine from Valle d'Aosta, to stay on theme. In summer, it is delightful in a cold dish with fresh goat cheeses or chunks of mozzarella.

You could try making a salad with mushrooms or artichokes and add a few slices of mocetta. If you like, you can also add some Renette apples from Val d'Aosta, a few walnut halves, and pieces of fontina cheese. Simply dress with a citronette and your dish is ready. Add it to a risotto or a barley soup to give everything a spicier touch.
